Let’s Yolk About It (LYAI) is a vibrant breakfast and brunch restaurant located in what some would claim is the heart of Long Beach, East Second Street. It’s just a five minute stroll from the world renowned Alamitos Bay, surrounded by numerous unique shops filled with experiences you cannot attain anywhere else in California. Enjoy a welcoming atmosphere provided by our passionate staff, LYAI is the perfect place to start your morning! Just like how the yolk is the heart of the egg, Let’s Yolk About It has a singular goal, to make you feel like you’re at home, come experience true Southern hospitality.

The beginnings

Eggciting Breakfast spot on 2nd

Rebecca Hinderer, deciding the corporate lifestyle was not for her, and moved to Long Beach over a decade ago. She worked for Tequila Jacks as a bartender during their independent ownership. Shortly after Legends, the original Sports Bar reopened, she was hired as a bartender there and proceeded to work there for a decade. Rebecca utilized these positions to engrain herself into the culture of Long Beach, and landed a job at The Breakfast Bar. Poached by Josh and Pamela Beadel, owners of the iconic The Breakfast Bar of Long Beach, they promoted her to General Manager. Her hard work and determination had led her to a once-in-a-lifetime encounter with Melissa Almarez. 

The two shared a unique bond over a dream of owning their own restaurant. As the Pandemic was in full swing, and not the most opportune time to be setting up a new business because prices were through the roof for locations, Melissa and Rebecca had stumbled upon a great opportunity. The owners of the building, where Let’s Yolk About It (LYAI) is located, Mike Colonna and Frank Colonna took a chance on the two ambitious entrepreneurs. Originally, Melissa and Rebecca had discussed what to name the restaurant, with What’s Crackin as a candidate, thinking that was a good yolk. Of course, they eventually landed on the popular Let’s Yolk About It. The breakfast/brunch restaurant opened their doors on December 21, 2020, immediately falling onto hardship when restaurants were forced to close down again. Luckily the community was there and they survived via To-Gos throughout this down time. During this difficult time, unfortunately Melissa and Rebecca’s visions had grown apart and Rebecca had bought out all of Melissa’s shares, becoming sole owner of LYAI. Rebecca and Melissa are still of course great friends and she is extremely grateful for having shared this experience of bringing LYAI to life.

Now it’s 2022 and Let’s Yolk About It is the talk of East Second Street. Rebecca is excited to continue providing Southern hospitality to Long Beach with plans to expand LYAI across Southern California. Rebecca has always loved the restaurant industry and with over two decades of experience, she has very ambitious goals to grow her reach from the breakfast game to supplying the community with available open spaces for events and increasing the sense of family that is so prominent in Long Beach.

With a career spanning over two decades, Rebecca Hinderer has been a noteworthy entrepreneur and restaurateur within Long Beach and Southern California. Having been born and raised in Houston, Texas, true Southern hospitality is her game and has materialized her dream in owning Let’s Yolk About It.
